A creamy and comforting vanilla milk rice made with simple pantry ingredients, gently simmered until soft, rich, and perfectly sweet. Perfect served warm or chilled.

Ingredients

  • 1 cup short grain white rice, rinsed
  • 4 cups whole milk
  • 1/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons crushed nuts (optional, for topping)

Instructions

  1. Place a medium saucepan over medium heat to warm slightly.
  2. Add rinsed rice, whole milk, sugar, and salt into the saucepan. Stir to combine.
  3. Bring to a gentle simmer, then reduce heat to low.
  4. Cook for about 25 minutes, stirring occasionally at first and more frequently as it thickens, until rice is tender and mixture is creamy.
  5. Stir in butter and vanilla extract, then cook for another 5 minutes until rich and velvety.
  6. Remove from heat and let rest for 5 minutes to thicken.
  7. Spoon into serving bowls and top with crushed nuts if desired. Serve warm or chilled.

Notes

  • Stir frequently toward the end of cooking to prevent sticking.
  • If too thick, add a splash of warm milk before serving.
  • Store in an airtight container in the refrigerator for up to 3 days.
