  • 4 cups all purpose flour (about 500 grams)
  • 1 ½ cups warm water (about 360 milliliters)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 tablespoon granulated sugar
  • 1 ½ teaspoons salt
  • 2 tablespoons olive oil
  • ¼ cup grape molasses mixed with ¼ cup water
  • 1 cup toasted sesame seeds

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
  3. Add flour, salt, and olive oil. Mix and knead for 8 to 10 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise for 1 hour until doubled in size.
  5. Divide dough into 8 equal pieces. Roll each into ropes, twist two ropes together, and shape into rings.
  6. Dip each ring into the molasses and water mixture, then coat completely in toasted sesame seeds.
  7. Place rings on prepared baking sheet and bake for 18 to 20 minutes until deep golden brown.
  8. Remove from oven, cool slightly on a rack, then serve warm.

  • For deeper flavor, lightly toast sesame seeds before coating.
  • You can substitute diluted honey for grape molasses if needed.
