A quick, flavorful one-pan meal featuring ground turkey, taco spices, veggies, and melted cheese — perfect for weeknights or casual entertaining.

Ingredients

  • Ground Turkey: 1 pound
  • Olive Oil: 1 tablespoon
  • Yellow Onion: 1 medium, diced
  • Red Bell Pepper: 1 medium, diced
  • Garlic: 3 cloves, minced
  • Taco Seasoning: 2 tablespoons
  • Canned Black Beans: 1 can (15 oz), drained and rinsed
  • Canned Fire-Roasted Diced Tomatoes: 1 can (14.5 oz), undrained
  • Frozen Corn: 1 cup
  • Shredded Cheddar Cheese: 1½ cups
  • Salt and Pepper: To taste
  • Chopped Cilantro: 2 tablespoons

Instructions

  1. Preheat Your Equipment: Set your skillet over medium heat. Add the olive oil and let it warm until shimmering.
  2. Combine Ingredients: Add diced onion and bell pepper. Sauté 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
  3. Prepare Your Cooking Vessel: Push veggies to one side, add ground turkey, and cook until browned and cooked through — 6–8 minutes.
  4. Assemble the Dish: Stir in taco seasoning, fire-roasted tomatoes, black beans, and corn. Simmer for 5–6 minutes.
  5. Cook to Perfection: Sprinkle cheddar cheese on top, cover, and cook 2–3 minutes until melted and bubbly.
  6. Finishing Touches: Remove from heat, let rest a few minutes, and top with chopped cilantro and optional lime.
