Turkey & Rice Stuffed Tomatoes

Tender baked tomatoes filled with a savory mix of seasoned ground turkey and fluffy rice, finished with herbs for a comforting and wholesome meal.

  • 6 large ripe tomatoes
  • 450 g ground turkey
  • 1 cup cooked white rice
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 190°C and lightly grease a baking dish.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until soft, then add garlic.
  3. Add ground turkey and cook until no longer pink.
  4. Stir in cooked rice, tomato paste, salt, black pepper, and dried oregano. Mix well and remove from heat.
  5. Cut the tops off the tomatoes and carefully scoop out the centers.
  6. Fill each tomato with the turkey and rice mixture.
  7. Arrange the stuffed tomatoes in the baking dish and cover loosely with foil.
  8. Bake for 30 minutes, then remove foil and bake for another 10 minutes until tomatoes are tender.
  9. Sprinkle with fresh parsley and serve warm.

Notes

  • Choose tomatoes of similar size for even cooking.
  • Taste the filling before stuffing and adjust seasoning if needed.
  • Leftovers taste even better the next day.
