This Tex Mex Cabbage Skillet is a hearty, one-pan meal packed with ground beef, black beans, tomatoes, corn, spices, and melted cheese. It’s quick, easy, and full of bold Tex Mex flavor, perfect for busy weeknights.

Ingredients

  • 1 small green cabbage, shredded
  • 1 pound ground beef
  • 1 cup black beans (cooked or canned, drained)
  • 1 cup corn kernels
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onions for 2–3 minutes until translucent.
  2. Add garlic and cook for 30 seconds. Stir in ground beef and cook until browned, about 6–8 minutes.
  3. Push the beef to one side and add shredded cabbage. Cook for 5 minutes, stirring occasionally, until slightly softened.
  4. Mix cabbage and beef together. Add diced tomatoes, black beans, corn, chili powder, cumin, salt, and pepper. Stir well to combine.
  5. Cover and simmer for 8–10 minutes until cabbage is tender and flavors meld.
  6. Uncover and sprinkle shredded cheddar cheese over the top. Cover again for 2–3 minutes to melt.
  7. Garnish with fresh cilantro or jalapeños, and serve hot.

Notes

  • Use fire-roasted tomatoes for extra depth of flavor.
  • Don’t overcook cabbage to avoid sogginess.
  • Try adding lime juice before serving for brightness.
