A cozy, family-friendly bake that layers herby pizza sauce, gooey mozzarella, colorful veggies, and a crown of crispy golden tater tots for the ultimate cheesy, saucy, crunchy comfort dish.

  • 1 (32 ounce) bag frozen tater tots
  • 2 cups pizza sauce
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil, for greasing the dish
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 cup diced bell peppers
  • 1/2 cup finely diced red onion
  • 1/2 cup sliced black olives
  • 1 cup sliced mushrooms
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish with olive oil.
  2. In a bowl mix pizza sauce with garlic powder, dried oregano, dried basil, and red pepper flakes.
  3. Spread half of the frozen tater tots in an even layer on the bottom of the prepared dish.
  4. Spoon the seasoned pizza sauce evenly over the tots. Top with half of the mozzarella, then scatter bell peppers, red onion, black olives, and mushrooms evenly over the cheese. Add the remaining mozzarella and Parmesan.
  5. Arrange the remaining tater tots in a single layer over the top.
  6. Bake uncovered for 35 to 40 minutes until the tots are golden and the cheese is bubbling. If desired broil 1 to 2 minutes for extra crispiness.
  7. Rest 5 minutes, garnish with fresh basil, slice into squares, and serve hot.

Notes

  • Bake uncovered so the top layer of tater tots turns deeply golden and crisp.
  • Do not thaw the tater tots, bake straight from frozen for the best texture.
  • Slice vegetables thinly to prevent excess moisture and ensure even cooking.
  • Let the casserole rest 5 minutes before serving so the layers set for cleaner slices.
  • For make-ahead assembly, refrigerate up to 24 hours and add 5 to 10 minutes to the bake time.
