Soft on the inside and lightly crisp on the outside, these Sweet Potato Spinach Bites are a wholesome, flavorful snack or appetizer made with simple ingredients and baked to golden perfection.

Ingredients

  • 2 medium sweet potatoes, about 2 cups mashed
  • 2 cups fresh spinach, finely chopped
  • 1 large egg
  • 1 cup plain breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
  2. Mash the roasted sweet potatoes in a large bowl until smooth.
  3. Stir in chopped spinach, egg, breadcrumbs, garlic powder, onion powder, salt, and black pepper until evenly combined.
  4. Lightly brush parchment paper with olive oil.
  5. Scoop about 1 tablespoon of mixture and roll into small balls. Place evenly spaced on the baking sheet.
  6. Bake for 20 minutes, flip gently, and bake another 5 minutes until lightly golden.
  7. Let cool slightly before serving.

Notes

  • Squeeze excess moisture from spinach to avoid soggy texture.
  • For extra crispness, broil for 1 to 2 minutes at the end.
  • Store leftovers in an airtight container for up to 4 days.
