Ingredients

  • Sweet potatoes, 2 cups mashed
  • Granulated sugar, 3/4 cup
  • Unsalted butter, 1/2 cup melted
  • Whole milk, 1/2 cup
  • Eggs, 2 large
  • Ground cinnamon, 1 teaspoon
  • Ground nutmeg, 1/2 teaspoon
  • Vanilla extract, 1 teaspoon
  • Salt, 1/4 teaspoon
  • Unbaked pie crust, 1 (9-inch)

Instructions

  1. Preheat oven to 350°F and position a rack in the center.
  2. In a large bowl, combine mashed sweet potatoes, sugar, melted butter, and milk until smooth.
  3. In a separate bowl, whisk the eggs, then gently mix them into the sweet potato mixture.
  4. Add cinnamon, nutmeg, vanilla extract, and salt, then stir until fully combined.
  5. Pour the filling into the unbaked pie crust, smoothing the top.
