Crispy on the outside and soft and cheesy on the inside, these Sweet Potato Cheese Bites are the perfect comforting snack or appetizer. Made with simple ingredients and baked until golden, they deliver a delicious balance of sweetness and savory flavor in every bite.

  • 2 medium sweet potatoes, about 2 cups mashed
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a mixing bowl, mash the cooked sweet potatoes until smooth. Add mozzarella, parmesan, egg, garlic powder, salt, and black pepper. Mix until fully combined.
  3. Place breadcrumbs in a shallow bowl and lightly brush the parchment lined baking sheet with olive oil.
  4. Scoop small portions of the mixture and shape into bite sized cubes or balls. Roll each one in breadcrumbs, pressing gently so they are evenly coated.
  5. Arrange the bites on the baking sheet and lightly brush or drizzle with olive oil.
  6. Bake for 20 minutes until golden and crispy on the outside.
  7. Let cool slightly before serving warm.
