½ cup popcorn kernels
1 cup granulated sugar
½ cup butter
¼ cup light corn syrup
1 teaspoon vanilla extract
¼ teaspoon salt
Instructions
Preheat a large pot over medium heat and pop the popcorn kernels. Transfer the popped popcorn to a large bowl and set aside.
In a medium saucepan, combine the sugar, butter, corn syrup, and salt. Stir constantly over medium heat until the mixture begins to bubble. Continue cooking for 4–5 minutes until thickened slightly.
Remove the syrup from heat and stir in vanilla extract.
Pour the hot syrup over the popcorn and quickly stir with a spatula to coat all the kernels evenly.
Optional: Spread the coated popcorn on a lined baking sheet and bake at 250°F (120°C) for 30 minutes, stirring every 10 minutes.
Let the popcorn cool completely before serving or storing.
Notes
Store in an airtight container to keep it crunchy.
Sprinkle with cinnamon or drizzle with melted chocolate for extra flavor.
