Sweet Corn Rice Bake is a cozy, cheesy casserole packed with sweet corn, fluffy rice, and melty cheddar. It’s creamy, flavorful, and perfect as a main or hearty side dish.

  • 3 cups cooked rice
  • 1.5 cups sweet corn kernels
  • 1.5 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons melted butter
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large mixing bowl, combine cooked rice, corn, 1 cup of cheese, milk, butter, eggs, garlic powder, thyme, salt, and pepper. Stir well.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Sprinkle remaining 1/2 cup of cheese on top and dust with paprika.
  5. Bake uncovered for 30–35 minutes until golden and bubbly.
  6. Let rest for 5–10 minutes before serving. Garnish with parsley if desired.
