- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup lemon curd (store-bought or homemade)
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and sugar until light and fluffy.
- Add egg and vanilla; mix well.
- Whisk flour, baking powder, and salt in a separate bowl; gradually add to wet ingredients.
- Roll dough to 1/4-inch thickness and cut out sun shapes using cookie cutters.
- Place on baking sheet and bake 10–12 minutes until edges are golden.
- Cool completely and spoon lemon curd into the center of each cookie before serving.
Notes
- Chill dough for 30 minutes if it’s too soft to roll.
- Decorate edges with yellow sanding sugar for sparkle.
