A warm, gooey skillet pudding packed with ripe bananas, chewy dates, and toasted pecans, drenched in rich toffee sauce. This comforting dessert is sticky, sweet, and irresistibly soft in every bite.

Ingredients

  • All-Purpose Flour: 1 1/4 cups (160 g)
  • Baking Soda: 1 tsp
  • Salt: 1/2 tsp
  • Unsalted Butter: 1/2 cup (115 g), melted
  • Brown Sugar: 3/4 cup (150 g)
  • Eggs: 2 large
  • Mashed Ripe Bananas: 2 medium (about 1 cup)
  • Pitted Dates: 3/4 cup (120 g), chopped and soaked in 1/2 cup boiling water for 10 minutes
  • Vanilla Extract: 1 tsp
  • Chopped Pecans: 1/2 cup (60 g), toasted
  • Brown Sugar (for Toffee Sauce): 1/2 cup (100 g)
  • Unsalted Butter (for Toffee Sauce): 1/4 cup (60 g)
  • Heavy Cream: 1/2 cup (120 ml)
  • Vanilla Extract (for Sauce): 1/2 tsp
  • Salt: pinch

Instructions

  1. Preheat Your Equipment: Heat oven to 350°F (175°C). Grease a 10-inch ovenproof skillet with butter or nonstick spray.
  2. Combine Ingredients: In one bowl, whisk flour, baking soda, and salt. In another, whisk melted butter, brown sugar, eggs, bananas, and vanilla until smooth.
  3. Prepare Your Cooking Vessel: Drain soaked dates and mash lightly. Stir into the wet mix. Fold in dry ingredients just until combined, then add toasted pecans.
  4. Assemble the Dish: Pour batter into the skillet and smooth the surface. Tap to remove air bubbles.
  5. Cook to Perfection: Bake 25–30 minutes until golden and mostly set with a few moist crumbs.
  6. Finishing Touches: For the toffee sauce, melt butter and brown sugar in a saucepan. Stir in cream, vanilla, and salt. Simmer 2–3 minutes until glossy.
  7. Serve and Enjoy: Poke holes in the warm pudding and drizzle over some sauce. Serve slices with extra sauce and a scoop of ice cream.
