Ingredients

  • 4 cups seedless watermelon, cut into bite sized cubes
  • 1 cup feta cheese, crumbled
  • 1 small fresh jalapeño, thinly sliced
  • 2 tablespoons fresh mint leaves, finely chopped
  • 1/4 teaspoon chili flakes
  • 1 tablespoon fresh lime juice

Instructions

  1. Place the watermelon cubes in a large mixing bowl.
  2. Add fresh lime juice and chili flakes to the bowl and gently toss to coat the watermelon evenly.
  3. Arrange small clear serving cups on a flat surface.
  4. Spoon the seasoned watermelon evenly into each cup.
  5. Top each cup with crumbled feta cheese.
  6. Add thin slices of jalapeño over the feta in each cup.
  7. Chill the assembled cups in the refrigerator for 10 to 15 minutes if desired.
  8. Sprinkle finely chopped mint over each cup just before serving.
  9. Serve chilled and enjoy.
