A bold and comforting spicy chicken tortilla lasagna layered with tender shredded chicken, warm spices, soft tortillas, and melted cheese. Baked until bubbly and golden, this hearty dish is perfect for family dinners and meal prep.

  • 3 cups cooked shredded chicken
  • 8 medium flour tortillas
  • 2 cups shredded Mexican blend cheese, divided
  • 2 cups tomato sauce
  • 1 cup diced tomatoes with green chilies, drained
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add 1/2 cup chopped onion and cook until soft, about 3 minutes. Stir in 2 cloves minced garlic and cook for 30 seconds.
  3. Add 3 cups cooked shredded chicken, 2 cups tomato sauce, 1 cup drained diced tomatoes with green chilies, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Simmer for 5 minutes.
  4. Lightly grease a 9×13 inch baking dish.
  5. Spread a thin layer of the chicken mixture on the bottom. Place 2 tortillas over the sauce. Add more chicken mixture and sprinkle some of the shredded cheese. Repeat layers until ingredients are used, finishing with cheese on top.
  6. Bake uncovered for 20 to 25 minutes until the cheese is melted and bubbly.
  7. Let rest for 10 minutes before slicing and serving.

Notes

  • Let the lasagna rest before slicing for cleaner layers.
  • Use freshly shredded cheese for better melting.
  • Adjust chili powder to control spice level.
  • You can substitute corn tortillas for a slightly different texture.
