Golden and crispy on the outside, tender and warmly spiced on the inside, these lentil bites are a satisfying plant based snack or appetizer that comes together quickly and delivers bold, comforting flavor in every bite.

Ingredients

  • 2 cups cooked brown lentils, drained well
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all purpose flour
  • 2 tablespoons olive oil

Instructions

  1. Heat a nonstick skillet over medium heat and add 1 tablespoon of olive oil.
  2. In a mixing bowl, lightly mash the cooked lentils with a fork. Stir in the onion, garlic, parsley, cumin, smoked paprika, salt, black pepper, and flour until a thick mixture forms.
  3. Add the remaining 1 tablespoon of olive oil to the skillet, ensuring the surface is lightly coated.
  4. Scoop about 2 tablespoons of the mixture and shape into small round balls or patties. Place them on a plate as you work.
  5. Place the shaped bites into the hot skillet and cook for 3 to 4 minutes on each side until golden brown and crisp.
  6. Transfer the cooked bites to a plate lined with paper towel to remove excess oil.
  7. Serve warm with your favorite dip or sauce and enjoy.

Notes

  • If the mixture feels too soft, chill it in the refrigerator for 15 minutes before shaping.
  • Make sure the lentils are well drained to prevent the bites from falling apart.
  • For baking, cook at 400°F for about 20 minutes, flipping halfway through.
  • You can substitute chickpea flour for a gluten free option.
