Ingredients

  • Boneless skinless chicken thighs: 2 lb (900 g), trimmed
  • Honey: 1/2 cup (170 g)
  • Soy sauce: 1/3 cup (80 ml)
  • Garlic, minced: 4 cloves
  • Ketchup: 1/4 cup (60 ml)
  • Rice vinegar: 2 tablespoons
  • Fresh ginger, grated: 1 tablespoon
  • Sesame oil: 1 teaspoon
  • Cornstarch: 2 tablespoons
  • Water: 2 tablespoons, for slurry
  • Toasted sesame seeds: 1 tablespoon, for garnish
  • Green onions, thinly sliced: 2 tablespoons, for garnish

Instructions

  1. Combine sauce: In a bowl whisk honey, soy sauce, garlic, ketchup, rice vinegar, ginger, and sesame oil until smooth.
  2. Load the slow cooker: Place chicken thighs into the slow cooker and pour the sauce over, turning to coat well.
  3. Cook: Cover and cook on Low for 4 to 5 hours or on High for 2 to 3 hours until the chicken is tender.
  4. Thicken sauce: Transfer chicken to a plate. Stir cornstarch and water to make a slurry, whisk into the cooking liquids, cover, and cook 5 to 10 minutes until glossy and thick.
  5. Coat: Return chicken to the slow cooker and toss gently in the thickened sauce.
  6. Garnish: Sprinkle with toasted sesame seeds and sliced green onions.
  7. Serve: Spoon over hot rice or noodles and enjoy while saucy and warm.

  • For deeper flavor sear the chicken in a hot skillet for 2 minutes per side before slow cooking.
  • Use thighs for best juiciness. If using breasts reduce cook time and check early.
