Ingredients

Scale
  • 12 ounces pasta (penne or rotini)
  • 1 pound boneless, skinless chicken breast, cut into cubes
  • 1 cup diced ham
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 ½ cups chicken broth
  • 1 cup low-fat milk
  • ½ cup plain Greek yogurt
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons flour
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat Your Equipment: Bring a large pot of salted water to boil for pasta. Heat olive oil in a skillet.
  2. Combine Ingredients: Cook pasta until al dente, drain, and set aside. Sear chicken in skillet until golden.
  3. Prepare Your Cooking Vessel: Remove chicken, then sauté garlic in the same skillet. Whisk in flour.
  4. Assemble the Dish: Slowly whisk in chicken broth and milk until smooth. Stir in Greek yogurt, Parmesan, and mozzarella.
  5. Cook to Perfection: Return chicken to the pan with diced ham. Simmer until sauce thickens and proteins are heated.
  6. Finishing Touches: Toss pasta with sauce. Adjust consistency with reserved pasta water if needed.
  7. Serve and Enjoy: Garnish with parsley and extra Parmesan before serving hot.

Notes

  • Reserve pasta water to adjust sauce consistency.
  • Keep heat low when adding yogurt and cheese to prevent curdling.
  • Leftovers reheat well with a splash of broth or milk.
