  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 400°F and place a cast iron skillet inside to heat.
  2. In a mixing bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. Add milk and eggs to the dry ingredients and gently mix until just combined.
  4. Carefully remove the hot skillet from the oven and pour in the melted butter, swirling to coat.
  5. Pour the batter into the prepared skillet and spread evenly.
  6. Bake for 20 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
