A warm and cozy skillet cinnamon flat cake with soft crumb, lightly crisp edges, and a sweet cinnamon swirl finished with a simple vanilla glaze.

  • 240 g all-purpose flour
  • 150 g granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 240 ml milk
  • 85 g unsalted butter, melted
  • 1 large egg
  • 2 teaspoons ground cinnamon
  • 75 g brown sugar
  • 60 g powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 180 C and grease a cast iron skillet.
  2. In a bowl, mix flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk milk, melted butter, and egg until smooth.
  4. Combine wet ingredients with dry ingredients and stir until just mixed.
  5. Pour the batter into the prepared skillet.
  6. Mix cinnamon and brown sugar, sprinkle over the batter, and gently swirl.
  7. Bake for 25 minutes until the center is set.
  8. Mix powdered sugar, vanilla, and a small amount of milk to form a glaze.
  9. Drizzle glaze over the warm cake and serve.
