Ingredients

  • Spaghetti: 12 ounces
  • Shrimp: 1 pound, peeled and deveined
  • Olive Oil: 3 tablespoons
  • Garlic: 4 cloves, minced
  • Red Pepper Flakes: ½ teaspoon
  • Cherry Tomatoes: 2 cups, halved
  • Tomato Paste: 1 tablespoon
  • White Onion: 1 small, finely chopped
  • Lemon Juice: 1 tablespoon
  • Fresh Parsley: ¼ cup, chopped
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Reserved Pasta Water: ½ cup

Instructions

  1. Preheat Your Equipment: Boil a large pot of salted water. Heat a skillet over medium heat.
  2. Combine Ingredients: Cook spaghetti until al dente. Drain and save ½ cup pasta water.
  3. Prepare Your Cooking Vessel: In skillet, sauté onion and garlic in olive oil. Add tomato paste and cherry tomatoes. Cook until tomatoes burst.
  4. Assemble the Dish: Add red pepper flakes, lemon juice, and half the parsley. Simmer 5–7 minutes.
  5. Cook to Perfection: In another pan, cook shrimp with olive oil, salt, and pepper until pink. Add to tomato sauce.
  6. Finishing Touches: Toss cooked spaghetti and pasta water into sauce. Mix gently until coated.
  7. Serve and Enjoy: Garnish with remaining parsley and a squeeze of lemon. Serve warm.

Notes

  • Use fresh garlic and herbs for the best flavor.
  • Reserve pasta water to help the sauce coat the noodles.
  • Undercook pasta slightly and finish cooking in the sauce.
  • Don’t overcook shrimp — they cook quickly and become rubbery if left too long.
