A flaky croissant folded and pan-cooked with fluffy scrambled eggs, melted cheddar, and fresh spinach for a quick savory breakfast.

Ingredients

  • 1 large croissant
  • 2 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1/2 cup fresh spinach
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1 tsp butter

Instructions

  1. Heat skillet over medium heat.
  2. Whisk eggs with salt and pepper.
  3. Melt butter in skillet.
  4. Pour eggs into skillet and place croissant cut side down into eggs.
  5. Add cheese and spinach.
  6. Fold croissant closed and cook 3 to 4 minutes per side.
  7. Cook until golden and cheese melts, then serve.
