Soft and fluffy savory pancakes made with cottage cheese and fresh herbs, golden on the outside and tender inside, perfect for breakfast or brunch.

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup all purpose flour
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 2 tablespoons green onions, finely sliced
  • 2 tablespoons olive oil for cooking

Instructions

  1. Preheat a nonstick skillet over medium heat.
  2. In a large bowl, whisk the eggs. Stir in cottage cheese and milk until mostly smooth.
  3. Add flour, baking powder, salt, and black pepper. Fold in dill, parsley, and green onions. Mix gently until just combined.
  4. Add olive oil to the skillet and swirl to coat evenly.
  5. Spoon about 1/4 cup of batter per pancake into the skillet.
  6. Cook for 3 to 4 minutes per side until golden brown and cooked through.
  7. Transfer to a plate and serve warm.

Notes

  • Do not overmix the batter to keep the pancakes tender.
  • Cook on medium heat to avoid burning the outside.
  • You can substitute ricotta for cottage cheese for a smoother texture.
