This savory bread strata is a cozy, make-ahead casserole layered with crusty bread, sautéed vegetables, and melty cheese, all soaked in a rich egg custard and baked to golden perfection.

Ingredients

Scale
  • 6 cups crusty bread, cubed
  • 8 large eggs
  • 2 cups whole milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup grated parmesan cheese
  • 1 ½ cups sliced mushrooms
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper until smooth.
  3. In a skillet, heat olive oil and sauté onions until soft. Add garlic, mushrooms, and spinach, and cook until tender.
  4. Layer half of the bread in the dish, then top with half of the vegetable mixture and cheeses. Repeat the layers.
  5. Pour the egg mixture evenly over the top, pressing down lightly to help soak.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake another 20–25 minutes until golden and set.
  7. Let rest for 10 minutes before slicing and serving.

Notes

  • Use day-old bread for best texture.
  • Try different cheeses for unique flavor combos.
  • Letting it rest before baking helps it soak up all the custard.
  • Great for prepping the night before a brunch.
