Hearty handheld breakfast sandwiches with fluffy griddled biscuits, juicy sausage patties, and melty cheddar, all finished with buttery tops for a diner-style bite at home.

  • 1 pound breakfast sausage, shaped into 6 thin patties
  • 1 can refrigerated biscuit dough (8 biscuits) or 2 cups homemade biscuit dough, use 6 biscuits for sandwiches
  • 6 slices cheddar cheese
  • 2 tablespoons unsalted butter, divided, plus more as needed for griddle
  • 1/4 teaspoon fine salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Instructions

  1. Preheat Your Equipment: Heat a griddle or large skillet over medium heat and lightly butter the surface.
  2. Combine Ingredients: Form the sausage into 6 equal patties, season both sides with salt and pepper, and set aside.
  3. Prepare Your Cooking Vessel: Place 6 biscuits on the hot griddle, leaving space between them; cook until the bottoms are golden, about 3 to 4 minutes, flip and cook 3 to 4 minutes more until cooked through. Remove and keep warm.
  4. Assemble the Dish: Cook the sausage patties on the griddle until browned and cooked through, about 3 to 4 minutes per side. Split each biscuit and layer with a sausage patty and a slice of cheddar.
  5. Cook to Perfection: Return the assembled griddlers to the griddle, cover with a lid or inverted pan, and heat 1 to 2 minutes until the cheese melts.
  6. Finishing Touches: Brush the tops with the remaining melted butter for shine and extra flavor.
