These crispy sardine patties are golden on the outside and tender on the inside, bursting with bold flavors, herbs, and pantry staples. A quick, budget-friendly comfort meal that’s perfect any time of day.

Ingredients

  • 2 cans sardines (3.75 oz each), drained
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup red bell pepper, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 23 tablespoons oil for frying

Instructions

  1. Heat a non-stick skillet over medium heat and add oil.
  2. In a bowl, lightly mash sardines with a fork. Add breadcrumbs, egg, green onion, garlic, red bell pepper, parsley, lemon juice, salt, and pepper. Mix gently.
  3. Form mixture into 6–8 small patties with your hands.
  4. Place patties in the hot skillet and cook for 3–4 minutes on each side until golden brown.
  5. Transfer to a paper towel-lined plate to drain excess oil.
  6. Serve hot with lemon wedges or your favorite dip.

Notes

  • Chilling patties before cooking helps them hold shape.
  • Use gluten-free breadcrumbs for a gluten-free version.
  • Great served with salad, in wraps, or over rice.
