- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 large eggs
- 2/3 cup whole milk
- 1 tsp vanilla extract
- 2 Honeycrisp apples, peeled and diced
- Vegetable oil, for frying
- Glaze: 1 cup powdered sugar, 2–3 tbsp milk, 1/2 tsp vanilla extract
- Flaky sea salt, for topping
- In a large bowl, whisk flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat eggs, milk, and vanilla. Stir wet ingredients into dry until just combined. Fold in diced apples.
- In a deep pot or fryer, heat oil to 350°F (175°C).
- Drop batter by heaping spoonfuls into hot oil. Fry 2–3 minutes per side until deep golden brown. Drain on paper towels.
- For glaze, whisk powdered sugar, milk, and vanilla until smooth.
- Dip warm fritters in glaze or drizzle over top, then sprinkle with flaky sea salt.
Notes
- Do not overmix batter — a few lumps are fine.
- Best served the same day for optimal crispness.
- You can rewarm fritters in a 300°F oven for 5–7 minutes.
