Warm roasted sweet potatoes filled with creamy cinnamon yogurt, topped with fresh banana slices and crunchy cacao nibs. A naturally sweet, nourishing option perfect for breakfast, snack, or light dessert.

  • 4 medium sweet potatoes, about 8 ounces each
  • 1 1/2 cups plain Greek yogurt, full fat or low fat
  • 2 medium ripe bananas, sliced
  • 2 tablespoons cacao nibs
  • 2 tablespoons honey (optional)
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a small bowl, mix the Greek yogurt with ground cinnamon until smooth.
  3. Place whole sweet potatoes on the prepared baking sheet, spacing them evenly.
  4. Roast for 40 minutes, or until fork tender. Let cool slightly, then slice open lengthwise and gently fluff the inside with a fork.
  5. Return opened sweet potatoes to the oven for 5 additional minutes to lightly caramelize the edges.
  6. Spoon the cinnamon yogurt into each sweet potato. Top with sliced bananas, sprinkle cacao nibs, and drizzle honey if desired.
  7. Serve warm and enjoy.

  • For crispier skins, place sweet potatoes directly on the oven rack.
  • Use full fat yogurt for a richer texture.
