A creamy, savory dip made from roasted carrots blended with tahini, garlic, and lemon juice. Smooth, naturally sweet, and perfect for dipping or spreading.

Ingredients

  • Carrots, 1 pound, peeled and cut into chunks
  • Olive oil, 2 tablespoons
  • Tahini, 1/3 cup
  • Garlic cloves, 2
  • Lemon juice, 2 tablespoons
  • Ground cumin, 1 teaspoon
  • Salt, 1 teaspoon
  • Water, 2 to 4 tablespoons

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Toss the carrots with olive oil and salt until evenly coated.
  3. Spread the carrots in a single layer on a lined baking sheet.
  4. Roast for 25 to 30 minutes until tender and lightly caramelized.
  5. Transfer the warm carrots to a blender or food processor.
  6. Add tahini, garlic, lemon juice, and ground cumin.
  7. Blend until smooth, adding water gradually to reach desired consistency.
  8. Taste and adjust seasoning, then transfer to a serving bowl.
