Rhubarb Puff-Tart Pockets are flaky, buttery pastries filled with tangy rhubarb and sweet sugar. These delightful handheld pockets are the perfect treat for any occasion, offering a delicious balance of flavors and textures!

Ingredients

  • Puff pastry sheets: 2 sheets (store-bought) – Forms the flaky, buttery outer layer of the pockets.
  • Rhubarb: 2 cups, chopped – The star ingredient, providing a tangy and sweet filling.
  • Sugar: 1/4 cup – Sweetens the tartness of the rhubarb.
  • Cornstarch: 1 tablespoon – Helps thicken the rhubarb filling.
  • Lemon juice: 1 tablespoon – Adds a touch of acidity and enhances the rhubarb flavor.
  • Vanilla extract: 1/2 teaspoon – Enhances the sweetness of the rhubarb.
  • Egg wash: 1 egg, beaten – Used to brush on the puff pastry for a golden finish.

Instructions

  1. Preheat Your Equipment: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine Ingredients: In a medium saucepan, combine the chopped rhubarb, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat for 5-7 minutes, until the rhubarb breaks down and the mixture thickens. Set aside to cool.
  3. Prepare Your Cooking Vessel: Roll out the puff pastry on a lightly floured surface. Cut the pastry into squares (about 4 inches each).
  4. Assemble the Dish: Spoon a tablespoon of the rhubarb mixture into the center of each square. Fold the pastry over the filling to create a pocket, pressing the edges to seal.
  5. Cook to Perfection: Brush the tops of the pockets with the egg wash and place them on the prepared baking sheet. Bake for 15-18 minutes, or until golden brown and puffed.
  6. Finishing Touches: Let the pockets cool slightly before serving. For an added touch, dust with powdered sugar or drizzle with icing.
  7. Serve and Enjoy: Serve warm with a scoop of vanilla ice cream or enjoy on their own as a delicious snack or dessert.

Notes

  • For extra puff, be sure to chill the puff pastry before baking.
  • Add cinnamon or ginger to the filling for extra flavor.
  • For an indulgent treat, serve with whipped cream or ice cream.
