Raspberry Jam Oat Bars layer a buttery oat crust with vibrant raspberry jam and a golden crumble topping for a sweet-tart, crumbly treat that’s perfect for snacks, dessert, or coffee breaks.

  • 1 1/2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3/4 cup raspberry jam
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment, leaving overhang for easy lifting.
  2. Stir together oats, flour, brown sugar, baking soda, and salt in a mixing bowl until evenly combined.
  3. Pour in melted butter and vanilla, then mix until the mixture is evenly moistened and crumbly.
  4. Press about two thirds of the oat mixture firmly into the prepared pan to form an even crust.
  5. Warm the raspberry jam slightly if needed, then spread it evenly over the crust, reaching the corners.
  6. Sprinkle the remaining oat mixture over the jam to create a crumb topping. Add optional nuts or chocolate if using.
  7. Bake for 25 to 30 minutes, until the top is golden and the edges are set.
  8. Cool completely in the pan on a rack, then lift out using parchment and cut into bars.

  • Choose a thick, good-quality jam to prevent a runny center.
  • Let bars cool fully before slicing for neat edges.
  • Note: Instant oats can make the crust too soft; use old-fashioned oats.
