- 12 oz spaghetti
- 1 lb ground chicken
- 2 tbsp olive oil
- 1 small onion, finely diced
- 2 garlic cloves, minced
- 1 carrot, grated
- 1 celery stalk, finely diced
- 1 can (14 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1/2 cup chicken broth
- 1 tsp dried Italian herbs
- Salt and black pepper, to taste
- Grated Parmesan and fresh basil, for serving
- Cook spaghetti in salted boiling water according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, carrot, and celery; sauté 5 minutes until softened.
- Add ground chicken and cook until browned, breaking up with a spoon.
- Stir in tomato paste, crushed tomatoes, chicken broth, Italian herbs, salt, and pepper. Simmer 10–12 minutes until slightly thickened.
- Toss cooked spaghetti with sauce. Serve topped with Parmesan and basil.
Notes
- Use whole wheat spaghetti for extra fiber.
- Add a splash of milk or cream for a richer sauce.
