Chewy, naturally sweet pistachio and date energy bars made with wholesome pantry ingredients. No bake, easy to prepare, and perfect for meal prep or a quick snack.

Ingredients

  • 2 cups Medjool dates, pitted and packed
  • 1 cup raw almonds, finely chopped
  • 1 cup rolled oats
  • 1 cup unsalted pistachios, roughly chopped
  • 1/4 cup almond butter
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Line an 8×8 inch pan with parchment paper.
  2. In a food processor, blend the dates until a sticky paste forms. Add almonds and pulse until finely chopped.
  3. Transfer mixture to a bowl and stir in rolled oats, almond butter, honey, vanilla extract, salt, and half of the pistachios.
  4. Press the mixture firmly and evenly into the prepared pan.
  5. Sprinkle remaining pistachios on top and gently press them in.
  6. Refrigerate for at least 1 hour until firm.
  7. Lift from the pan and slice into 12 even bars.

Notes

  • If the mixture feels dry, add 1 tablespoon almond butter.
  • If too sticky, mix in 1 to 2 tablespoons oats.
  • Store in an airtight container in the refrigerator for up to 1 week.
  • Freeze for up to 2 months and thaw before serving.
