Ingredients
Cherry Tomatoes: 2 cups (whole, washed)
Red Onion: 1 large (thinly sliced)
Cucumber: 2 medium (sliced into coins)
White Vinegar: 1 cup
Water: 1 cup
Sugar: 2 tablespoons
Salt: 1 tablespoon
Black Peppercorns: 1 teaspoon
Mustard Seeds: 1 teaspoon
Fresh Dill (optional): 2 sprigs
Instructions
Preheat Your Equipment: Sterilize your jar with hot water and set aside.
Combine Ingredients: In a large bowl, toss together the cherry tomatoes, sliced red onion, and cucumber coins.
Prepare Your Cooking Vessel: In a saucepan, combine vinegar, water, sugar, salt, peppercorns, and mustard seeds. Bring to a gentle boil, then remove from heat and let cool for 5–7 minutes.
Assemble the Dish: Place the vegetable mix into your sterilized jar. Tuck in dill sprigs if using.
Cook to Perfection: Pour the slightly cooled brine over the vegetables until fully submerged.
Finishing Touches: Seal the jar with a lid. Let it sit at room temperature for 30 minutes before transferring to the fridge.
Serve and Enjoy: Chill for at least 1 hour. Enjoy straight from the jar or as a vibrant topping!
Notes
Let the brine cool slightly to avoid over-softening the vegetables.
Shake or stir the jar once a day for even flavor distribution.
