Chewy, nutty, and lightly sweet, these peanut butter oat bars are the perfect grab-and-go snack or breakfast treat. Made with simple pantry staples and ready in under 30 minutes.

Ingredients

  • 2 cups rolled oats
  • 1 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, mix the peanut butter, honey or maple syrup, vanilla extract, and salt until smooth.
  3. Stir in the oats until fully combined, then fold in the chocolate chips if using.
  4. Press the mixture evenly into the prepared baking dish and smooth out the top.
  5. Bake for 15 to 18 minutes, or until the edges are lightly golden.
  6. Let cool completely before removing from the pan and slicing into bars.

  • Use natural peanut butter for best results.
  • Let the bars cool before slicing to avoid crumbling.
