No bake peanut butter chocolate rice bars made with crispy rice cereal, creamy peanut butter, honey, and a smooth dark chocolate topping. Chewy, crunchy, and perfect for easy desserts or snacks.

  • 3 cups crispy rice cereal
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line an 8 by 8 inch pan with parchment paper.
  2. In a saucepan over low heat, warm the peanut butter and honey until smooth and combined.
  3. Place the crispy rice cereal in a large mixing bowl.
  4. Pour the warm peanut butter mixture over the cereal and stir until evenly coated.
  5. Press the mixture firmly into the lined pan in an even layer.
  6. Melt the dark chocolate chips with coconut oil until smooth, then spread evenly over the top.
  7. Refrigerate for at least 1 hour until set, then slice into 12 bars and serve.
