Ingredients

Scale
  • 3 large ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, mash the bananas, then mix in peanut butter, brown sugar, eggs, milk, and vanilla until smooth.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  5. Pour the batter into the greased dish and smooth the top.
  6. Optional: add banana slices or a swirl of peanut butter on top.
  7. Bake for 35–40 minutes or until golden and a toothpick comes out clean.
  8. Let it cool in the pan for at least 10 minutes before slicing and serving.

Notes

  • Use very ripe bananas for the best flavor and texture.
  • Microwave the peanut butter for 10–15 seconds to make it easier to mix.
  • Sprinkle with sea salt or add chocolate chips for a fun twist.
  • Store leftovers in an airtight container at room temperature or in the fridge.
