  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 425°F and heat a cast iron skillet over medium-high heat.
  2. In a bowl, combine olive oil, garlic, rosemary, thyme, parsley, salt, and pepper. Rub over chicken thighs.
  3. Place chicken thighs skin-side down in the hot skillet and sear for 4 minutes until skin is golden.
  4. Flip chicken, arrange evenly in skillet, and transfer to oven.
  5. Roast for 25 to 30 minutes until internal temperature reaches 165°F and skin is crispy.
  6. Let rest for 5 minutes. Garnish with parsley and lemon wedges.
  7. Serve hot and enjoy.
