Crispy on the outside and fluffy on the inside, these oven-baked potato sticks are the ultimate snack or side dish. Seasoned just right and baked to perfection, they’re healthier than fries but just as satisfying.

Ingredients

  • 3 large Russet Potatoes
  • 3 tablespoons Olive Oil
  • 1 tablespoon Cornstarch
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Dried Oregano

Instructions

  1. Preheat oven to 425°F (220°C) and place baking sheet inside to heat.
  2. Peel and cut potatoes into thick sticks. Soak in cold water for 30 minutes.
  3. Drain and pat dry potatoes thoroughly.
  4. In a large bowl, toss the potato sticks with olive oil, cornstarch, garlic powder, paprika, salt, pepper, and oregano until evenly coated.
  5. Line hot baking sheet with parchment paper or lightly grease it.
  6. Arrange potato sticks in a single layer without overlapping.
  7. Bake for 20 minutes, flip them, then bake another 15–20 minutes until golden and crisp.
  8. Sprinkle with optional fresh herbs or sea salt. Serve hot with dips or as is.

Notes

  • Soaking helps remove starch for extra crispiness.
  • Preheating the tray gives a better crunch.
  • Use parchment paper to prevent sticking and make cleanup easier.
  • Cut potatoes evenly so they cook at the same rate.
