Crispy on the outside, tender on the inside, these oven baked veggie balls are packed with fresh vegetables and flavor. Perfect as a main, a snack, or a party appetizer.

Ingredients

  • 1 cup shredded carrots
  • 1 cup shredded and squeezed zucchini
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine shredded carrots, zucchini (squeezed dry), onion, garlic, breadcrumbs, Parmesan, eggs, parsley, salt, and pepper.
  3. Mix until just combined.
  4. Use a spoon or scoop to form 1.5-inch balls and place them on the prepared baking sheet.
  5. Bake for 20–25 minutes, flipping halfway through.
  6. Brush with olive oil during the last 5 minutes for a crispier finish.
  7. Cool slightly and serve warm.

Notes

  • Make sure to squeeze all excess moisture from the zucchini.
  • Chilling the mixture for 15–20 minutes can help with shaping.
  • Use parchment for easier cleanup and better browning.
