A moist citrus soaked cake made with semolina and fresh orange juice, tender, fragrant, and comforting.

Ingredients

  • 1 cup all purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup vegetable oil
  • 1 cup plain yogurt
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 cup water

Instructions

  1. Preheat oven to 350°F and grease a round cake pan.
  2. Whisk semolina, flour, sugar, baking powder, and salt.
  3. Mix oil, yogurt, orange juice, zest, and vanilla.
  4. Combine wet and dry ingredients gently.
  5. Pour into pan and bake for 35 minutes.
  6. Simmer sugar and water for 5 minutes to make syrup.
  7. Pour syrup over hot cake and rest before serving.
