Quick and fluffy no yeast cheese pan bread made in a skillet with simple pantry ingredients. Golden on the outside, soft inside, and filled with melted mozzarella and cheddar in every bite.

Ingredients

  • 2 cups (250 grams) all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup (240 milliliters) milk
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 cup (110 grams) shredded mozzarella cheese
  • 1 cup (110 grams) shredded cheddar cheese

Instructions

  1. Preheat a non stick skillet over medium heat and lightly grease it with olive oil.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Add milk, egg, and olive oil. Stir until just combined.
  4. Fold in shredded mozzarella and cheddar cheese evenly throughout the batter.
  5. Pour the batter into the prepared skillet and spread evenly.
  6. Cover with a lid and cook on low to medium heat for 12 to 15 minutes until the bottom is golden and the top is mostly set.
  7. Carefully flip and cook for another 5 to 7 minutes until fully cooked through.
  8. Remove from the pan and let rest for 5 minutes before slicing and serving.

Notes

  • Keep the heat moderate to prevent burning the bottom before the center cooks.
  • Do not overmix the batter to maintain a soft texture.
  • Covering the pan helps the bread cook evenly through the center.
