No-Bake Blueberry Pie

A luscious and refreshing no-bake blueberry pie made with a creamy filling, fresh blueberries, and a buttery graham cracker crust. Perfect for summer gatherings or when you want a quick, impressive dessert without turning on the oven.

  • 1. 1 1/2 cups graham cracker crumbs
  • 2. 1/3 cup granulated sugar
  • 3. 6 tbsp unsalted butter, melted
  • 4. 8 oz cream cheese, softened
  • 5. 1 cup powdered sugar
  • 6. 1 tsp vanilla extract
  • 7. 8 oz whipped topping (such as Cool Whip), thawed
  • 8. 3 cups fresh blueberries (divided)
  • 9. 1/2 cup blueberry jam
  • 10. 2 tbsp lemon juice

Instructions

  1. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of a 9-inch pie dish. Chill in the refrigerator for at least 30 minutes.
  2. In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Fold in the whipped topping until fully combined.
  4. Spread the cream cheese mixture evenly over the chilled crust.
  5. In a separate bowl, mix 2 cups blueberries with blueberry jam and lemon juice until coated.
  6. Spread the blueberry mixture over the cream layer.
  7. Sprinkle the remaining 1 cup of fresh blueberries on top for garnish.
  8. Chill the pie for at least 4 hours before serving to allow it to set.

  • For a lighter option, use low-fat cream cheese and whipped topping.
