A dramatic and comforting rice bowl featuring fluffy jasmine rice shaped into a dome, topped with savory caramelized chicken and finished with bubbling molten mozzarella that flows like lava.

  • 2 cups uncooked jasmine rice, rinsed
  • 3 cups water
  • 2 large chicken breast, diced into bite-sized cubes
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat oven to 375 degrees F.
  2. Cook jasmine rice with water in a saucepan over medium heat for about 15 minutes until tender, then fluff with a fork.
  3. Heat olive oil in a large skillet over medium heat. Add diced chicken, minced garlic, soy sauce, paprika, salt, and black pepper. Cook for 8 to 10 minutes until fully cooked and lightly caramelized.
  4. Pack warm rice firmly into a small bowl and invert onto an oven safe plate to form a dome shape.
  5. Spoon cooked chicken evenly over the rice dome.
  6. Cover generously with shredded mozzarella cheese.
  7. Bake for 8 to 10 minutes until cheese is fully melted and bubbling.
  8. Remove from oven and sprinkle with chopped parsley.
  9. Serve immediately and cut into the dome to allow the molten cheese to flow.

Notes

  • Rinse rice thoroughly before cooking for a fluffier texture.
  • Pack the rice tightly so the volcano shape holds well.
  • Use freshly shredded mozzarella for better melting and stretch.
  • Do not overbake after adding cheese to keep the chicken juicy.
