Ingredients

  • English Cucumber: 1 large, peeled and chopped
  • Fresh Lemon Juice: 1 cup
  • Fresh Mint Leaves: 1/2 cup packed
  • Honey or Agave: 1/2 cup
  • Cold Water: 4-6 cups
  • Ice Cubes: 2 cups
  • Garnish: Lemon slices, cucumber ribbons, and mint sprigs

Instructions

  1. Blend: Combine the chopped cucumber, lemon juice, mint leaves, honey, and 1 cup of water in a blender.
  2. Liquefy: Blend on high speed until the mixture is smooth and vibrant green.
  3. Strain: Pour the blended liquid through a fine-mesh sieve into a large pitcher, pressing the pulp to extract all juice.
  4. Dilute: Stir in the remaining 3-5 cups of cold water depending on preferred strength.
