Fluffy mini pancakes threaded with fresh strawberries, blueberries, and banana slices, creating a colorful and fun breakfast skewer perfect for brunch or busy mornings.

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1 large banana, sliced

Instructions

  1. Heat a nonstick skillet over medium heat and lightly grease with butter.
  2. In a bowl, whisk together flour, baking powder, salt, and sugar. In another bowl, mix milk, egg, melted butter, and vanilla extract. Combine wet and dry ingredients gently until just mixed.
  3. Ensure the skillet is evenly heated and lightly greased before cooking.
  4. Spoon small rounds of batter onto the skillet to form mini pancakes about 1 1/2 inches wide. Cook for 1 to 2 minutes per side until golden brown and cooked through. Allow pancakes to cool slightly.
  5. Continue cooking in batches until all batter is used.
  6. Thread a mini pancake, a slice of strawberry, a blueberry, and a slice of banana onto each skewer. Repeat the pattern until filled.
  7. Arrange on a plate and serve immediately.
