Ingredients

  • 12 mini tart shells (store-bought or homemade)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Optional toppings: fresh berries, chocolate drizzle, caramel, whipped cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Place tart shells on a baking tray lined with parchment paper.
  3. In a bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add egg, vanilla, and lemon juice, and beat until fully combined.
  5. Spoon the cream cheese mixture into each tart shell, filling about 3/4 full.
  6. Bake for 15–18 minutes or until the centers are set.
  7. Let cool completely, then chill in the fridge for at least 1 hour before serving.
  8. Top with your favorite garnishes and enjoy!

Notes

  • For a no-bake version, use pre-baked tart shells and chill the filling.
  • Use a muffin tin with cupcake liners as an alternative to tart shells.
