Crispy on the outside and oozing with melty cheese on the inside, these mini cheese quesadillas are the ultimate snack or party favorite. Quick to whip up and full of flavor, they’re perfect for any time of day.

Ingredients

  • 10 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons butter or oil
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Place a non-stick skillet over medium heat and allow it to preheat for 2 to 3 minutes.
  2. In a small bowl, combine the shredded cheddar and Monterey Jack cheeses.
  3. Add a small amount of butter or oil to the skillet and spread it evenly.
  4. Lay out a tortilla, sprinkle cheese over half, and fold it into a half-moon shape. Repeat with all tortillas.
  5. Place the folded quesadillas into the skillet, cooking 2 to 3 minutes per side until golden brown and cheese is melted.
  6. Transfer to a cutting board, allow to cool slightly, and sprinkle with chopped cilantro if using.
  7. Slice into wedges and serve warm with your favorite dips.

Notes

  • Use a combination of cheeses for the best flavor and texture.
  • Warm tortillas slightly before folding to prevent tearing.
  • To keep warm for a party, place in a low oven (200°F) on a baking sheet.
