Millionaire’s Shortbreads combine a buttery shortbread base, a silky caramel layer, and a glossy chocolate topping into one indulgent treat that’s as elegant as it is delicious.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, divided (1/2 cup for shortbread, 1/2 cup for caramel)
  • 1/2 cup granulated sugar
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup brown sugar
  • 1/4 cup golden syrup or corn syrup
  • 1/2 teaspoon salt, divided
  • 10 ounces semi-sweet chocolate
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper.
  2. Mix flour, 1/2 cup butter (softened), granulated sugar, and a pinch of salt until crumbly. Press into pan.
  3. Bake shortbread for 20 minutes until lightly golden. Let cool completely.
  4. In a saucepan, melt remaining 1/2 cup butter with brown sugar, condensed milk, and syrup. Cook over medium heat, stirring constantly, until caramel is golden and thick, about 8–10 minutes. Stir in vanilla and a pinch of salt.
  5. Pour caramel over cooled shortbread. Chill until firm.
  6. Melt chocolate in a double boiler or microwave until smooth. Pour over caramel and spread evenly.
  7. Allow chocolate to set at room temperature or refrigerate until firm. Score lightly before fully hardened for easy slicing.
  8. Cut into squares with a sharp knife and serve.

Notes

  • Chill each layer thoroughly before adding the next for neat slices.
  • Use parchment paper to lift shortbreads easily from the pan.
  • Sprinkle flaky sea salt on top of the chocolate for a gourmet finish.
