Millionaire’s Mini Bars are rich, layered treats with buttery shortbread, luscious caramel, and a smooth chocolate topping. Perfect for any occasion, they’re indulgent, bite-sized delights.

Ingredients

  • Unsalted Butter: 1 cup (2 sticks) – Used in all layers for rich flavor and texture.
  • All-Purpose Flour: 2 cups – Forms the tender, crumbly base of the shortbread.
  • Granulated Sugar: ½ cup – Adds sweetness to the shortbread and caramel.
  • Sweetened Condensed Milk: 1 can (14 oz) – Key to that silky caramel layer.
  • Light Brown Sugar: ½ cup – Deepens the caramel flavor.
  • Golden Syrup (or corn syrup): ¼ cup – Gives the caramel its glossy finish and smooth texture.
  • Salt: ½ teaspoon – Balances the sweetness in every layer.
  • Vanilla Extract: 1 teaspoon – Adds warmth and depth to the caramel.
  • Semi-Sweet Chocolate Chips or Chopped Chocolate: 1 ½ cups – Melts into the perfect smooth topping.
  • Heavy Cream: 2 tablespoons – Makes the chocolate topping luscious and spreadable.

Instructions

  1. Preheat Your Equipment: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Combine Ingredients: In a bowl, mix 1 cup softened butter, 2 cups flour, ½ cup granulated sugar, and a pinch of salt until a crumbly dough forms.
  3. Prepare Your Cooking Vessel: Press the dough evenly into the prepared pan and prick lightly with a fork.
  4. Assemble the Dish: Bake the shortbread for 20 minutes or until just golden. Meanwhile, make the caramel by combining ½ cup butter, ½ cup brown sugar, ¼ cup golden syrup, and 1 can of condensed milk in a saucepan.
  5. Cook to Perfection: Stir the caramel constantly over medium heat for 8–10 minutes until thick and golden. Pour over the cooled shortbread and chill for 1 hour.
